Meet June’s Glisten Girl of the Month, Miss Aydee Palomino! She’s quirky, fun-loving, and energetic. She recently graduated from Northern Arizona University with a BA in Business and just landed her first big girl job in marketing and sales! She’s always been healthy-in high school she ran cross country and she has always loved playing soccer. However, in college, she didn’t have much time for herself so now that she has graduated, she has made her health a priority and she sure looks fit and healthy! Read her interview to see what habits keep her healthy.

How do you make your health a priority?

I make my health a priority by watching what I put into my body. I don’t say that I don’t splurge, but I definitely limit the amount of junk food that I eat. However, if I’m watching a soccer game, the first thing I crave are chips. So, what I do to stay on track is to substitute them for watermelon jicama salad with some lemon-chile powder called Tajin. Since it’s crunchy, sweet, tangy, salty and spicy, it curbs my cravings! For the recipe for Aydee’s Watermelon Jicama Salad, see below.

Do you have a motto?

I don’t have one. Although, I do believe the saying that goes if you laugh more you’ll live longer.

What keeps you motivated and driven on a daily basis?

I think the excitement of what’s to come; whether it’s a job, spending time with the people I love, or planning for exciting trips. Even small things like waiting for a movie to come out, dancing to music, doing silly things, getting to know myself better everyday, talking to God, and building my knowledge base. All these things motivate me and keep me looking forward to the future!

What is your go-to song when working out?

I used to listen to Pitbull because his music is high-tempo with a lot of rhythm, but I’ve noticed that when I’m running it makes me want to race and I get exhausted sooner than later. Now, I listen to a lot of Blondie and electronic music.

Do you prefer to exercise outside or indoors?

Both! When I exercise indoors, I do Zumba. It’s especially great when you have a mirror and you can improve your moves. My favorite outside exercises include running and hiking.

What’s your favorite form of exercise?

Dance! I love it! It gets me excited every time. It’s a lot of cardio and it’s never boring or overrated!

What does your workout routine include?

Cardio, some stretching, and a little meditation. I also want to get into weight lifting soon.

Do you have a favorite power-up snack?

I love Zone dark chocolate bars or if I have Luna bars, I will have one before or after I exercise. I will also eat fruit with chocolate peanut butter; it’s delicious!

You have five minutes to make a nutritious meal – what do you do?

Cook up some green beans with garlic salt and some olive oil in a saucepan, make some guacamole, or my recent favorite side dish, spicy mango salsa.

What food do you splurge on?

Chips!!! They can be the spicy Lays, the lemon-flavored ones, or the limon-chile ones. If I have all of them, I will probably finish all three bags. I also love red wine. However, I don’t spurge on sweets, which is good.

Answer this: I’m happiest when…

I can just keep dancing, be with the people I love, and laugh that snorting, can’t breathe kind of laughter.

What makes you glisten?

Knowing that I do things for myself and no one else. I feel good about the healthy habits I have established and I try to inspire others do the same.

Aydee's Watermelon Jicama Salad

Ingredients
  • ½ small watermelon, cubed
  • 1 jicama, skinned and cubed
  • 2 limes, juiced
  • Tajin, to taste
Instructions
  1. Put the cubed watermelon and jicama in a medium sized bowl.
  2. Pour the lime juice over the top and toss to combine.
  3. Allow everyone to sprinkle their own Tajin seasoning onto their salad.
  4. Enjoy!

This is the recipe for Aydee’s favorite Watermelon Jicama Salad. She made it for us one night and since then, it has become a favorite healthy snack or dessert in our house. Give it a try, we know you will love it too!
