Peanut Butter Date “Cookies”

peanutbutter date cookies 2Good morning Glisteners! So, it’s day 2 of the 30 Day Refined Sugar-Free Challenge and we’re feeling great. Instead of having my usual 2-4 squares of dark chocolate after dinner, I opted for some fresh organic strawberries that we bought from a fruit stand near our house. On a side note, always choose local, organic produce over food that has been picked miles away when possible.

1. It will taste 10 million times more delicious because it was allowed to ripen before it was picked.

2. It will be more nutrient dense due to freshness.

3. It’s better for the environment!

Since I wasn’t quite full after my bowl of strawberries, I drank 1 can of lemon flavored sparkling water. I find that the bubbles help make me feel full without consuming additional calories or sugar. If you prefer, you can add a couple strawberries (or other fruit that’s in season in your area) and some mint to the lemon sparkling water to make your healthy treat more fun.

Due to my filling dinner, this light treat was a perfect ending to my day. However, there are some days when I need something a little heavier for dessert and I’m sure you will feel that way at some point throughout this 30 day challenge as well. So, here is a great dessert that you can make with just three ingredients in less than a minute!

peanutbutter date cookies3Peanut Butter Date “Cookies” are the perfect healthy treat. They taste exactly like gooey peanut butter cookies but without the sugar and butter! In college, my vegan roommate introduced me to these and ever since, they have been my go-to snack when I’m craving something decadent. They are great for before or after a workout and for those late study nights.

These little treats are ultra satisfying. For alternate variations, try making them with almond or cashew butter and top them with orange zest.

Ingredients
  • 2 Mejool Dates
  • 1 Tbsp peanut or almond butter
  • Cinnamon, to taste
Instructions
  1. Slice the dates open lengthwise and remove the pits.
  2. Stuff each date with ½ tbsp of nut butter.
  3. Sprinkle with cinnamon and enjoy!
