Quick and Easy Dinner: Vegetable Jalfrezi

jalfrezi2 Is it just me or has life been ridiculously busy for the past couple weeks? It must just be that time of the year? Month? Week? All of the above? Well, whatever it is, we know everyone needs an easy and healthy dinner that can be whipped up in a jiffy and cleaned up even quicker. Enter, Vegetable Jalfrezi. Soon to be your new favorite "I need food, and I need it now!" dinner. jalfrezi3We recommend keeping a jar of Seeds of Change Jalfrezi and a box of either mung bean or Pad Thai rice noodles on hand just for one of those crazy hectic nights when you need food fast. Seeds of Change is one of our favorite brands because they use ingredients that we would use in our very own glisten kitchen-no unpronounceable ingredients here! Also, if you love curry you will love this meal. The bell peppers and onions bring out the sweet flavors in the curry and add a nice crunch factor that contrasts perfectly with the soft noodles. The dish is rounded out with subtle heat from the Jalfrezi sauce. If you want a more filling dinner, add a protein such as chicken, shrimp or tilapia.  jalfrezi5 This is definitely a favorite in our household. In fact, it was the first dinner my little sister fixed for dinner all by herself when she was twelve years old! We hope you love it as much as we do! Seeds of Change makes this delicious and totally healthy curry sauce called Jalfrezi. Mixed with vegetables and noodles, this meal will definitely become a weeknight dinner favorite. Don't feel obliged to tell anyone how easy and quick it is to prepare because it tastes gourmet! Add shrimp or chicken if desired. Enjoy!

  • 1 red bell pepper, sliced lengthwise
  • 1 yellow bell pepper, sliced lengthwise
  • 1 zucchini, quartered and chopped
  • ½ onion, thinly sliced
  • 1 Tbsp olive oil
  • 1 jar of Seeds of Change Jalfrezi
  • 1 box mung beans or Annie Chun's Pad Thai Noodles
  1. Prepare noodles according to package instructions.
  2. Heat up olive oil in large saute pan over medium heat.
  3. When hot, add vegetables, stirring occasionally. Cook until tender but still slightly crunchy.
  4. Bring Jalfrezi sauce to a boil, stir, and reduce to lowest heat setting.
  5. To serve, place noodles in bowl, top with veggies and as much sauce as you desire.
  6. Garnish with cilantro and green onion.
